ZUCCHINI BREAD
i have had lots of Requests for this RECIPE.
Grease & flour 2 9x5x4" loaf pans or 3 7x3x2" or mini pans or 1 loaf pan & 4 mini pans Recipe can be doubled.
3 Eggs
1 cup Oil
1 cup Sugar
1/3 cup Molasses
2 tsp. Vanilla
2 cups Flour ( all purpose)
1/2 cup Whole Wheat Flour
1 tsp.Salt
1 tsp. Baking Soda
1/2 tsp.Baking Pd.
2 tsp. Cinnamon
2 cups Zucchini (shredded)
1 cups Nuts.. Chopped(i use Pecans)
Beat Eggs. Add... oil, Sugar, Molasses & Vanilla;
Beat until thick & Foamy.
Combine well...Flours, Salt, Soda, Bk.Pd.& cinnamon. Add to Egg mixture...Stir JUST until blended.
Add... Zucchini & Nuts..Combine well.(gently)
divide into Greased & Floured pans.
BAKE at 350F. 1 Hr.(45 min.. for mini pans)
until tests done.(toothpick inserted comes out clean.)
COOL in pans 10 min. Turn out on rack. Cool thoroughly.. ENJOY!:)
